Underground ovens and sacred spice blends

Every morning begins before dawn as our master cooks prepare the underground pits. Hickory charcoal embers and sealed clay vessels cook the lamb slowly until the meat separates effortlessly from the bone, infused with cardamom, cloves, and black lime.

We source our spices directly from regional growers who respect traditional cultivation, ensuring each platter carries the deep, resonant aroma of an authentic Arabian feast.

Whole lamb shoulders are hand-rubbed with our proprietary blend of toasted Yemeni spices and sea salt.

Meat is lowered into deep underground clay ovens heated by glowing charcoal embers.
